According to Dave, the Almost Guilt-Free Carrot Cake is yummy and worthy of his seal of approval. We've decided to call this version "carrot bread" because it is more like a zucchini bread or banana bread. And we went sans icing on this one. Truly it doesn't need the icing anyway. Nevertheless, it's a tasty sweet treat to enjoy any time you want.
